Grilled Honey and Sake Marinated Salmon

1 cup rice vinegar
1 cup sake
6 Tbsp. honey
6 Tbsp. Thai sweet chili sauce
8 oz. salmon steak

Mix rice vinegar, sake, honey, and sweet chili sauce. Marinate salmon in mixture 1 to 4 hours. Place salmon on grill and cook 2 minutes. Turn salmon 90 degrees and cook 2 minutes. Turn over and cook 2 minutes, then turn salmon 90 degrees and cook 2 minutes. Serve with Orange Sweet Chili Butter Sauce.

Orange Sweet Chili Butter Sauce

1/2 cup white wine
1/4 cup heavy whipping cream
1/4 lb. unsalted butter
1/4 cup orange juice concentrate
2 Tbsp. Thai sweet chili sauce

In a sauce pot, reduce white wine to 1/4 cup. Add heavy cream. Gradually add butter; stir to mix well. Bring mixture to a boil and remove from heat. Whisk in orange juice concentrate and sweet chili sauce.

Sea Bass Provencal

Salt and pepper
6 oz. sea bass filet
1/4 cup flour
1/4 cup olive oil
1/2 cup clam juice
6 Tbsp. finely chopped roasted tomato
1 Tbsp. finely chopped kalamata olives
1 Tbsp. capers
1 Tbsp. julienned basil
1 Tbsp. garlic butter

Salt and pepper sea bass filet, then dredge lightly in flour. Heat oil in a sauté pan over medium heat. Add sea bass and brown lightly. Turn and add clam juice, tomato, olives, capers and basil. Cover and cook 1 minute. Remove cover and stir in garlic butter. Remove from heat and serve.
