Greek Salad

3 cups green leaf lettuce
1/2 cup shredded red cabbage
1/2 cup grated carrots

Toppings

4 Tbsp. (heaping) freshly made hummus
1/3 cup sliced olives
3 cherry tomatoes
1/4 cup sliced artichoke hearts
1 roasted red bell pepper, sliced
1 medium cucumber, sliced
1/4 cup crumbled feta cheese

1/4 cup freshly made balsamic vinaigrette

On salad plates, arrange green leaf lettuce, red cabbage and carrot. Arrange toppings on salad in order given. Makes 2 servings.

Tropical Fruit Salad

2 cups cubed fresh pineapple
2 cups cubed fresh cantaloupe
2 large, ripe mangoes, cubed
2 kiwis, sliced
6 sliced strawberries
2 medium navel oranges, peeled, pith removed, cut into pieces
Juice of 1 small lemon
Juice of 1 small lime
1 tsp. sugar
Mint for garnish

Combine pineapple, cantaloupe, mango, kiwi, strawberry and orange in a large bowl. Mix lemon and lime juices with sugar; stir until sugar dissolves. Drizzle over fruit. Toss and refrigerate until ready to serve. Makes 6 to 8 servings.
