Haupia

2 1/2 cups coconut milk
1 cup sugar
1 cup water
1/2 cup cornstarch

In a medium saucepan, bring coconut milk and sugar to a boil. In a small bowl, mix water and cornstarch; add to boiling coconut milk. Cook and stir vigorously until mixture returns to a boil and has thickened. Pour into 9-inch square baking pan. Cool and refrigerate.

Caramelized Pineapple Rings

1/2 pineapple (cut crosswise)
1 cup firmly packed brown sugar
6 Tbsp. butter
1/2 vanilla bean

Peel and slice pineapple into 1/4-inch thick slices. Core and trim the slices to a 3-inch diameter.

In a skillet, cook butter, brown sugar and vanilla until it begins to caramelize and turn a deep brown. Add pineapple slices and cook over low heat, simmering until pineapple turns a deep brown and becomes tender. Place on a tray to drain and cool.

Fresh Pineapple Sauce

2 cups diced fresh pineapple
1/4 cup sugar
1/4 cup chopped fresh mint

Blend pineapple, sugar and mint. Strain.
